Boil water in a large pot. Place the wok over high heat with oil. Add the meat and stir fry until brown and crispy. Add onion and garlic and continue to cook until browning of onion.
Stir in spinach until wilted and add salt and pepper. Cook noodles according to package directions meanwhile and in another bowl, mix the chilli oil, soy sauce, sesame oil and dark soy sauce.
Toss the sauce mix and the noodles well with the onion, meat and spinach mixture in the wok.
Serve warm and enjoy
