Jollof Rice (Oven & Stovetop Method)

 3-4 tablespoons Vegetable Oil (42mL to 56mL)
 1 medium onion diced, red or white
 2 teaspoons (1.6g) fresh thyme or 1 teaspoon (1g) dried thyme (optional)
 1 tablespoon minced garlic (8g) or (9.7g) garlic powder
 3 cups (591g) Jolly Rice, uncooked
 Jolly Jollof spice mix, as per preference
 1 tablespoon (7g) paprika
 2 teaspoons (4g) chicken bouillon
 Salt and pepper to taste
 14 oz tomato puree (1 can)
 4 cups (1000mL) chicken broth or water (5.25 cups for stovetop)
 1 scotch bonnet pepper or 0.75 teaspoon hot pepper
 1 pound (453.59g) vegetables (optional)
 Parsley for garnishing

Preheat to 350 Fahrenheit & rinse rice. Combine and stir all ingredients in half sheet baking pan and cover with Aluminum foil.

Place in Oven and cook for 70-80 minutes. Carefully remove and check after 70 minutes. Let it rest and then carefully remove Aluminum foil.

Fluff rice with fork, throw add-ins and mix well, then serve warm.

Stovetop

Head oil in saucepan. Add onions, thyme, and garlic. 2 minutes cook and then add rice, paprika, Jollof spice mix, bouillon, salt and pepper.

Stir until fragrant and then stir occasionally, for 2-3 minutes. Next add tomato sauce, broth and hot pepper and bring to boil.

Reduce heat, cover saucepan and simmer until rice is tender and liquid is absorbed. Remove pan and keep covered. Fluff rice, then throw sautéed veggies or meat as per preference.

Garnish with parsley & serve
