Marcus Samuelsson’s BBQ Pork Fried Rice

Yields1 Serving
 2 tbsp soy sauce
 1 tbsp sesame oil
 2 tbsp mirin
 1 tbsp rice vinegar
 2 tbsp hoisin
 1 tbsp gochujang (SWAP TIP: use red chili sauce if you can’t find gochujang)
 ¼ cup vegetable oil
 2 eggs, whisked together
 Kosher salt
 1 medium red onion, diced & ½ cup sliced scallions
 2 tbsp ginger, minced
 2 garlic cloves, minced
 2 carrots, peeled & finely diced
 1.5  cups leftover BBQ pork ribs, cubed
 4 cups cooked, day old Jolly rice (Can also use Jolly Instant Rice)
 1 cup frozen peas, thawed
